Dumbfounded with the amount of good food seen going to waste, fellows in the Hybrid Cohort have begun building a system for cafeterias and restaurants on and around UT campus to donate food to local organizations like the UT Outpost and Keep Austin Fed. They’ve also investigated the idea of food upcycling, with the oddity ‘bagel chips’ (tasty chips refurbished from unwanted, stale bagels) holding promise of a real entrepreneurial product.

With many of them harboring an interest in healthcare, the fellows of the Fall ‘22 Cohort have begun exploring possibilities for providing needed care for uninsured students and homeless individuals around UT campus through organizations like the CommUnity Care clinic. They hope to re-establishment ties between the University and this organization that have since ceased. Check out their presentation from the spring ‘23 symposium for more information.

Having only just completed their first semester in the Fellowship, fellows of the Spring ‘23 Cohort have their eyes set on a a few ideas, from saving perfectly good items that are commonly discarded during dorm move-out on campus to aspects of education accessibility. Though members of this cohort have either graduated or joined the another cohort, their legacy lives on as the founding cohort of the Fellowship. Take a look at their work to learn about homelessness in Austin and the relationship they built with a start-up organization out of San Marcos called the HOME Center.
